Quick, Flame-Free Pizza

♫ It’s gettin hot in herre, so turn off all your stoves! ♫
♫ I am gettin so hot, I wanna turn my stove off! ♫

Yes?!?  Okay.  No, not really.

A great way to keep your home a comfortable temperature is to choose recipes that don’t require use of the oven or stove.  With the summer’s fresh and healthy ingredients, and no grease for the pan, eating raw can help you maintain a sexy figure without sacrificing taste.

So maybe it’s not from the Nellyville album, but this recipe is a no-cook winner.

Sauce:

This “pizza” sauce is a cool cross between pico de gallo, gazpacho, and a bruschetta topping.  It’s light, herbacious, cool, and simple enough to use wherever tomato sauce is called for.  Or, use it as a condiment to freshen your leftovers.  Makes about one cup.

1/4 small onion
1 clove garlic
2 small tomatoes, quartered (roma or vine-ripened are best)
small handful fresh basil

Pulse onion and garlic in a mini food processor until chopped fine.  Add tomato and pulse for 30 seconds.  Add basil and pulse until minced and mixture resembles a sauce.  Season with salt and pepper to taste.

Pizza:

Spread mixture on toasted baguette, cut lengthwise.  Top with sliced fresh mozzarella and basil.
